so, anybody who has known me for any length of time knows i LOVE to cook and bake. and eat. :)
on friday, mom and i went to cracker barrel for breakfast. we love their newest addition to the breakfast menu that includes a muffin and fruit and yogurt parfait. the granola they top it with is SO good...
well yesterday, i was trying to stay off my foot (which was stung by a wasp on friday afternoon and has continued to get bigger and itchier all weekend) but got a hankering for some of that cracker barrel granola. i searched the internet for a while and mix and matched a few recipes until i came up with this:
4 tbsp honey
3 tbsp maple syrup
about a tsp of cinnamon
2 1/2 cups old fashioned oats
1/2 cup unsweetened coconut
1/2 cup sliced almonds
1/2 cup dried cranberries
melt honey and maple syrup together on a stovetop on in the microwave.
mix together oats, cinnamon, coconut and almonds in a large bowl. pour honey/syrup mixture over oat mixture and stir well to coat everything.
pour onto a buttered or "pammed" cookie sheet and spread out in an even layer. bake at 300 degrees for about 45 minutes, stirring every 10-15 minutes. (you want your almonds and oats to be toasted)
let cool, then add dried cranberries.
this granola is a treat on yogurt (my snack last night) or with milk (i just finished off a bowl) and you could add anything you like... and with no added fat, it's one of the healthiest versions i've seen... enjoy!
