my oh my, it's buttermilk pie!


i had never even heard of buttermilk pie until about 3 years ago when my mother-in-law made it for a family gathering... come to find out, it's my father-in-law's favorite and has since become mine. although i love me some pie, i'm not really one to crave it. well, until i had this one. it's texture is similar to chess pie, but it has a delicious sweet tangy-ness that tastes nothing like buttermilk... any time i've made it, it's disappeared.

tonight, we had a couple over for dinner and this was the perfect end to some comfort food. here is the super simple recipe for heaven on a plate:

1 cup buttermilk
3 eggs
1 stick melted butter
2 cups sugar
3 tbsp flour
1 tsp vanilla
2 pie crusts

preheat oven to 350. mix all ingredients and pour equal portions into the two shells. bake for 40-45 minutes. the top and crust will brown up a bit and the center won't be super jiggly.

*note* my m-i-l gets the pie crusts that you roll out and put in your own glass pie plate (which are usually deep dish), so she only gets one pie out of this recipe, but i used the kind that come pre-packaged in the tin pie plates and got two pies out of it... and when it's this good, two is definitely better than one!
